easy peach cobbler recipe

Today, my sister faxed me the above easy peach cobbler recipe: seems her peaches are riper than the peaches on my patio peach tree or … she just couldn’t resist :-)

 

Nothing is easier to bake as a cobbler: you put your fruits in a baking tray, add your liquid batter that finds its way through the fruit and rises above the fruit when baking. Or as the easy peach cobbler recipe mentions:

 

"Peach treasure under a biscuit dough"

 

For those using metric measures, I converted this easy peach recipe below.

 

Easy peach cobbler recipe metric measures

 

Fruit base:

 

  • 340 g cooked, pitted peaches
     
  • 65 gram sugar
     
  • 2 tablespoons Ready-Mix for pancakes
     
  • 1 tablespoon lemon juice
     
  • 14 gram butter

 

Topping

 

  • 180 gram ready-mix for pancakes
     
  • 50 gram sugar
     
  • 1 beaten egg
     
  • 180 ml milk
     
  • 50 gram shortening, melted

My sister says it’s delicious like it is, but personally I prefer an easy peach cobbler recipe served with vanilla ice cream :-)

patio peach tree

Our patio peach tree has survived summer well and the peaches are almost ripe to harvest.

 

Our other peach trees scattered in the garden are doing fine as well.

 

The only "problem" I have with peaches is that they tend to be ripe all at the same time, including the peaches of our neighbours and family members. Meaning: when you need to harvest: you will be short of hands.

 

Luckily freezing peaches is an option today, as in the olden days I would sterilise all my peaches in pots. Having a very old washing machine, it was easy to put lots and lots of pots together in one go, but still you needed to wash the peaches and make the syrup. The advantage of these sterilized peaches is that the sugar gets into the fruit and once you want to eat peaches, you have them ready at hand.

 

Anyway, time to dig in the cookbooks and look for peach pie recipes and hubby’s secret orange pineapple juice peach schnapps recipe… Hubby always conserves fruit in alcohol, you wonder why he doesn’t hate cold winter days :-)

 

Lots of anticipated work from our peach trees all because somebody threw some peach seeds in and around the garden and in our patio :-)
